A fresh opportunity is brewing for food and ice cream traders as the Inverness Castle Experience prepares to open its gates in late summer 2025.

Two sought-after mobile concession spots are now up for grabs within the iconic castle’s historic grounds.

One will serve as a food and beverage unit, while the other will scoop sweet success as an ice cream vendor.

Both will be located near the newly imagined Saltire Bistro, adding flavour to the much-anticipated visitor experience.

The transformation of Inverness Castle is backed by the Inverness and Highland City-Region Deal, part of a wider £315 million investment into the Highlands.

The deal brings together support from the UK and Scottish governments, Highland Council, Highlands and Islands Enterprise and the University of the Highlands and Islands.

Applicants are expected to meet all health and hygiene regulations with professionally presented mobile setups.

Traders should reflect the spirit and standards of the attraction, promising quality service with a Highland welcome.

The final pitch spots will be agreed in discussion with High Life Highland ahead of launch.

Although peak trading is expected from April to September, year-round service may be possible for those with ambition.

Expressions of interest should be emailed to hlh.business.support@highlifehighland.com by Monday 26th May 2025.

Be sure to title your email either ‘Inverness Castle Experience – Food Concession Agreement’ or ‘Inverness Castle Experience – Ice Cream Concession Agreement’.

The email should include your unit’s name and full contact details.

Full tender details will follow for all applicants on Monday 2nd June 2025.

Final applications must then be submitted by Monday 16th June 2025.

The castle’s transformation is receiving £30 million in funding from local and national partners.

The result will be a landmark destination blending Highland heritage with modern experiences.

With crowds expected from near and far, this is a prime opportunity for food and ice cream vendors to take centre stage.
