From Head Chef to Owner as Sun Dancer Begins New Chapter in Nairn

A popular Nairn restaurant is entering a new chapter after its head chef stepped forward to become its new owner in what has been described as a homegrown Highland success story.

The Sun Dancer restaurant, which sits on Nairn’s seafront and has become a well known destination for locals and visitors alike, is passing into the hands of current Head Chef Darren Barclay.

CRU Hospitality and Cobbs Group, which took over the restaurant together in 2024, have announced they are handing over ownership to Darren after recognising his talent, ambition and passion for the business.

For Darren, it is the culmination of almost two decades spent building his career in some of the north’s most respected kitchens and a chance to shape the future of a restaurant he quickly came to believe in.

His journey began at Inverness restaurant Rocpool before taking him to Loch Ness Country House Hotel and the Seafood Ristorante in St Andrews, experiences that helped develop a style focused on quality ingredients and memorable dining experiences.

Having worked previously within both the Cobbs and CRU businesses, Darren joined the Sun Dancer kitchen earlier this year, with both companies believing they had found the right person to lead the restaurant.

It was not long before Darren recognised the venue’s own potential and approached the group about taking ownership himself.

“After nearly 20 years in hospitality I’ve been fortunate to learn from some outstanding people throughout my career.

“Working alongside Arran McMaster at Cobbs taught me a huge amount about leadership, team culture and what it takes to build a successful hospitality business.

“I’m looking forward to bringing that experience to Nairn and building on the excellent reputation The Sun Dancer already enjoys.”

For CRU Hospitality and Cobbs Group, the handover reflects a belief in investing in people and supporting talent to progress within the industry.

The hospitality sector has faced significant challenges in recent years, with operators across Scotland continuing to struggle to recruit and retain experienced chefs and hospitality professionals.

Against that backdrop, the decision to pass ownership to someone already embedded within the business has been welcomed as an example of how opportunities can be created for those willing to build careers in the industry.
